Non-Dairy Sweet Potato Pie
1 pie crust
1 1/2 lb dark-orange sweet potatoes (about 2 medium-large)
1/2 cup vegan butter, softened (Miyokos preferred)
Sub small part brown sugar for molasses (about 2 tbsp)
1/2 cup brown sugar
1/2 cup granulated sugar
1/4 cup Oat Milk
1/4 cup non-dairy yogurt (unflavored coconut preferred)
2 tablespoons tapioca flour
2 tablespoons bourbon or 1 teaspoon vanilla
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
2 eggs
Instructions:
Preheat oven to 400
mix ingredients together then put in pie crust
put a foil shield around the pie crust to prevent over-browning
lower heat to 350 and bake for 60-minutes or until done
could be good to remove foil and let crust brown for about 10 minutes before pie is done
remove from oven and let cool and rest before serving
